Holy "cow" thats really good!

Ever since I was a little girl I always asked for "The Cow" on my salad. In fact a few waitresses had given me a pretty peculiar look in my childhood. My Grandfather who lived in Ohio was a truck driver and whenever he was passing through Illinois we would meet up with him for lunch at the local truck stop and I would proudly ask for my favorite dressing "The Cow". Imagine my horror when I finally learned to read and found out it was called Western Dressing... Such a boring name for something so delicious. I recently came across a cookbook that had a recipe for homemade dressing so I gave it a try today.Lately I have been trying to limit the amount of processed food we get at the store and make as much as possible as I can at home. I have to say this was exactly like it came right out of the bottle. I think I actually like it better than the original. Of course its still not the healthier alternative and I of course drown my lettuce in it so I can kill the taste of the green stuff but I can at least prounounce all the ingredients. It does use store bought ketchup so you still are getting that corn syrup but at least its not as much as if you bought a whole bottle of the factory stuff. I have yet to make my own catsup as I hear its ALOT of work but maybe if we have a good garden year I might just give it a try.

THE COW DRESSING
1 cup sugar
1 cup oil (I used Vegetable)
1/2 c apple cider vinegar
1 tsp worcestshire sauce
1/2 c catsup
1/2 tsp onion flakes ( I used even less not a huge fan of onions)
1 clove of garlic minced
Salt and pepper to taste
Put all in a blender and blend til creamy
Refrigerate
I had enough to fill a pint jar and then some

Peanut Butter Dog Biscuits

We have started working on our homemade Christmas presents. I have never tried making cookies for dogs before. These were super easy and the dogs seemed to really like them. We decided to write each dogs name in the dough before they are baked so we can make a nice gift bag for all the furry kids in our family.


Timber keeping an eye on the biscuit baking. Just watch your cooking time as the recipe states 25 to 30 minutes.The first batch got a little over done but the dogs still ate them so they must be pretty good. I wasnt brave enough to try them myself though you could eat them as there is nothing in them thats not edible. Something about the bone shape
 just couldnt do it lol!!

Peanut Butter Dog Biscuits

Description:

Cooking Time:Bake 25 to 30 minutes.

Ingredients:
2 3/4 cupswhole wheat flour
2 3/4 cupsall-purpose flour
3 tbsp.C&H® Pure Cane Dark Brown Sugar
1 tsp.salt
3eggs
1 cuppeanut butter
1/3 cupvegetable oil
1 cupwater

Instructions:
Preheat oven to 375°F. Line a cookie sheet with parchment paper and set aside.

Combine all dry ingredients in mixing bowl. Add eggs and peanut butter, mixing well. Blend in oil and water until dough is smooth. Cover dough and allow to rest for about 20 minutes.

Roll dough out onto floured board to 1/2 inch thick and cut into desired shapes. Place on prepared cookie sheet and bake for 25 to 30 minutes, depending on size of dog treat. The biscuits will look light brown in color and will be very hard.

Customize your dog biscuits before baking by using a toothpick or the tip of a small paring knife to write their name. Garnish with ribbon.

HINT: When measuring peanut butter, line your measuring cup with plastic wrap for easy clean up. Also, wrap your rolling pin in plastic wrap to prevent any peanut oils from being absorbed into the wood of your rolling pin.


Serving Size:Makes 18 to 24 biscuits.

Taffy Apple Salad Recipe

This salad is so delicious and super easy! I make this on pretty much every special occasion. Last time we had it was on Halloween and I served it in my favorite spider bowl. My Grandma and I have been known to eat if for breakfast.Ill will be making this later on today to take tommorow to our family Thanksgiving dinner. Give it a try its even better the next day.

Strawberry Pie..So easy and delicious

I think that strawberry pie is my absolute favorite pie ever. It is so simple to make and everyone loves it.

Its even better if you have fresh stawberries picked right out of your garden. Its still to early here for berries so I had to use store bought but its still yummy.

Now All I need Is a Dairy Cow or Two

 I decided today to try and make butter. I know its much easier just to go and buy it at the store but I wanted to see if I could do it. It was so easy and to see cream turn into butter is really quite magical.
 There are actually two easy ways to make your own butter. One is to put the heavy cream into a large jar and shake it until the butter seperates from the buttermilk . I started out this way but because I halfed the recipe I didnt use a big enough jar, plus I was getting quite the workout. WHEW!!

Because I didnt have a big enough jar and my arms were getting pretty tired I switched to the mixer. It was really like a minute in the mixing bowl and it started to seperate into buttermilk and butter.

Once it is seperated you have to strain the liquid (buttermilk) from the curds (butter)
It will look like this once you rinse it off until the water is clear.

Add salt to your tasting if you want salted butter or you can leave it unsalted.
Waa Laa its BUTTER!! So delicious on homemade amish bread!

Now have to search for a recipe for the buttermilk, pancakes maybe or biscuits? The possibilities are endless.
Th recipe I used called for a quart of Heavy Cream not the ultrapastureized. Let it sit til its room temperature and then start shaking or mixing. Add your salt when its all done. Store in the refrigerator in a sealed container.

I wish that I knew some one with a dairy farm because I had to get my cream at the store. Not the same experience that my Grandma has told me about so many times of having to milk the cows and seperate the cream from the milk, but then again she wasnt too fond of having to do that everyday. She tells me to just buy it at the store, so much easier she says lol!  Thats not magical at all and not nearly as much fun.

I Conguered The Cinnamon Roll!

If you have read any of my previous postings you will know that I am bread challenged. As hard as I tried I never had much luck with homemade breads. Well just recently I am proud to say that I did indeed bake a loaf of bread and it was delightful. Well today I decided to tackle the cinnamon roll. Up until now any cinnamon roll that was baked in our house came from a tube. But today I did it!!! The whole house smelled delicious and my cinnamon rolls turned out perfect. I am so proud!!

It's such a good feeling when you try something you have always been wanting to do and you succeed at it! I even managed to chase after two puppies the whole time I was making them.My next challenge is going to be Hawaiian  Bread.

Amish Meatloaf

This was really good and easy!

Ingredients

  • 2 pounds ground beef
  • 2 1/2 cups crushed butter-flavored crackers
  • 1 small onion, chopped
  • 2 eggs
  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 slices bacon
  •  
  • 1 cup ketchup
  • 2 tablespoons vinegar
  • 3/4 teaspoon salt, or to taste
  • 2 tablespoons prepared yellow mustard
  • 1/2 cup brown sugar

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
  3. Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

Dressed Up For Valentines Day

With Valentines day just around the corner I wanted to share a very easy but delicious Gift idea. We made these last year and it was alot of fun.

                                        Tuxedo Strawberries
How to make:

Ingredients

  • 18 medium fresh strawberries with stems
  • 1 cup vanilla or white chips
  • 3-1/2 teaspoons shortening, divided
  • 1-1/3 cups semisweet chocolate chips

Directions

  • Line a tray or baking sheet with waxed paper; set aside. Wash strawberries and pat until completely dry.
  • In a microwave-safe bowl, melt vanilla chips and 1-1/2 teaspoons shortening at 70% power; stir until smooth. Dip each strawberry until two-thirds is coated, forming the tuxedo shirt, allowing excess to drip off. Place on prepared tray; chill for 30 minutes or until set.
  • Melt chocolate chips and remaining shortening. To form the tuxedo jacket, dip each side of berry into chocolate from the tip of the strawberry to the top of vanilla coating. Repeat on the other side, leaving a white V-shape in the center. Set remaining chocolate aside. Chill berries for 30 minutes or until set.
  • Remelt reserved chocolate if necessary. Using melted chocolate and a round pastry tip #2, pipe a bow tie at the top of the white V and three buttons down front of shirt. Chill for 30 minutes or until set. Store in the refrigerator in a covered plastic container for up to 1 day. Yield: 1-1/2 dozen.

Wagner Ware and Southern Cornbread Recipe

Thse are my Wagner Ware cast iron pans I purchased at an auction awhile back.
A little bit of history about Wagner Ware. From what I have read it changed Americas kitchens for the better. 

"In 1895 the Montgomery Ward mail-order catalog drew from a growing number of foundries in the United States to present customers with the widest variety yet of cast iron cooking ware.
They featured lots of gem pans, and a waffle iron produced by the Wagner Manufacturing Co. in Sidney, Ohio.  However one of their biggest sellers was Schofield's Patent cake griddle.  The catalog proclaimed these griddles "makes better cakes than any other griddle ever invented, because the little pans are deep and hold the batter and prevent it spreading out, getting thin and drying out." Depending on size the pans were billed as provided six to eight cakes per minute.  Cost was 65 cents per pan"


The ones I own are called corn stick pans. Im not sure of the exact date when they were made but Im guessing maybe the 1920's or 30's by what I have researched online. They are very heavy and very well made, not like the type of cookware we have nowadays. This is what My Great Grandma cooked with. I get a bit of nostalgia using my pans to bake cornbread for my family, Even though they made fun of the fact that their dinner did INDEED look like a corncob. I hope to pass them along to the next generation in the future and I can almost guarantee that these pans will outlive me.  Now if I could just find a cast iron skillet to call my own. Just think how great my fried chicken will turn out if I have one of THOSE!

Southern Sweet Cornbread recipe

Ingredients:

Total Time: 50 mins

  1. 1 Grease a 9x13 inch baking pan with shortening.
  2. 2 Preheat oven to 375°F.
  3. 3 Mix sugar, butter, eggs, milk, honey and water together in a large bowl.
  4. 4 Mix dry ingredients together in a separate bowl: cornmeal, flour,baking powder, and salt.
  5. 5 While stirring, add dry ingredients to sugar, egg, and milk mixture and mix thoroughly.
  6. 6 Mixture will be slightly lumpy.
  7. 7 Pour into greased rectangular pan.
  8. 8 Bake for 25-30 minutes or until golden brown on top.
